Ageless Diet™ Recipes for Eating on the Go (perfect for work, when you travel by train, plane or automobile, or for a quick lunch at home)
Rice & Beans
1/2 cup cooked of your favorite rice (AE Vincent Basmati Rice)
1/2 cup chickpeas or garbanzo beans (Eden Organics)
10 stalks of RAW asparagus copped into bite-size pieces
2 tablespoons – Nama Shoyu Soy Sauce (This brand is fermented and this soy sauce is very important to digestion. It’s available at most local health food stores.)
Mix together in a portable container.
The soy sauce will absorb so there will be no problem going through security at the airport. If you’re taking this to the office, it’s great to let it absorb. The longer it sits, the tastier it is!
Sweet Potato & Black Beans
1 baked organic sweet potato (leave the skin on – it’s full of good taste and nutrients!)
Add grass fed, organic butter (or ghee – I love Ancient Organics) or olive oil to taste (1-2 tablespoons)
Salt and pepper to taste
1 can of organic black beans (Eden Organics), drained and warmed
Combine the beans and potato and season to taste with olive oil, butter or ghee and salt and pepper. Add chili powder and cumin powder to taste, use more if you like it spicy, less it you want just a bit of extra flavor.
Mix greens with raw spinach (use all organic)Every veggie you like… chopped into bite size pieces (I use carrots and celery for crunch, and I add red bell peppers and grape tomatoes for color and more antioxidants.)
Add baked sweet potato (chopped into a bit bigger than bite sized pieces with skin on)
Dressing can be stored into small Ziplock baggies if you’re taking it on the plane
I double it & store it in with my on board liquids, and then there’s no problem going through security at the airport. Or if you’re taking this dish to work, get a good BPA free container and use that for all your brown bag lunches!
The dressing: 2 parts olive oil to 1 part balsamic vinegar. Whisk together and add 1/2 tablespoon lemon juice, sprinkle of garlic powder, sea salt and pepper
Everything here can be made the night before to make getting out the door easier… Eating healthfully for an ageless mind, body, spirit!
