Quinoa Bowl with Sesame Dressing

Fresh veggies, quinoa, and a simple dressing are you need for a really delicious, ageless meal. Big batch cook your grain for really quick preparation. It’s an easy meal that’s perfect for breakfast, lunch, or dinner. Substitute quinoa for the grain of your choice, if you want.

Ingredients
  1. 1 cup of quinoa, rinsed and cooked
  2. 1 red bell pepper, diced
  3. 1 carrot, diced
  4. 1 avocado, chopped into chunks
  5. 1/2 medium sized cucumber, peeled and diced
  6. 2 stalks of celery with leaves, diced
  7. 1/2 cup of cilantro, stems and leaves, chopped
  8. 2 tablespoons of sesame oil
  9. 4 tablespoons of unfiltered apple cider vinegar
  10. 4 teaspoons of tamari or soy sauce, or to taste
  11. Hot sauce, to taste
  12. Salt, to taste
Instructions
  1. Spoon half the cooked quinoa into each bowl.
  2. Top with the chopped veggies, garnish each bowl with half an avocado and fresh cilantro.
  3. Dress the quinoa veggie bowl with 1 tablespoon of sesame oil, 2 of apple cider vinegar, and 2 teaspoons of tamari.
  4. Season to taste with hot sauce and salt, as needed.
  5. Serve with a spoon, stir for the dressing to combine with the veggies and quinoa.
