This is a great side dish, serves 4, or you can make it a main course, for 2, by adding a piece of grilled fish, we like wild caught salmon from the Pacific. Just put the fish on top of the salad, season with salt, pepper, dash more of turmeric and cayenne, and serve with brown or black rice (my favorite). I add an avocado for an extra rich, creamy delicious vinaigrette. Cut an avocado in chunks, whisk loosely with vinaigrette keeping the chunks of avocado intact, add in cabbage and other ingredients, top with fish, and you have an excellent meal that is part of our Ageless Diet™.
Recipe for Cabbage Salad
1/4 head napa cabbage
1/4 head green cabbage
1/2 bunch green onions (use the green and white parts of the onion)
1/3 bunch cilantro
1/2 cup raw walnuts
1/4 cup golden raisins
1 tablespoon rice wine vinegar (make sure you buy one with no sugar added)
2 tablespoon apple cider vinegar (we like Bragg’s unfiltered apple cider vinegar)
1 tablespoon grapeseed oil
1/4 teaspoon minced garlic
1/2 teaspoon curry
1/4 teaspoon turmeric
1 teaspoon sea salt
Pinch of cayenne
Cut all cabbage into 1 inch pieces
Chop up green onion
Coarsely chop cilantro (Italian parsley can be substituted)
Cut avocado into bite-sized chunks
Whisk the vinaigrette in the base of the bowl used for the salad and then add the chunks of avocado, blend avocado into the dressing, taking care not to break up the chunks too much. Add the salad ingredients, making sure to get all parts of the salad are combined with the vinaigrette.
