Recipe: Tommy’s Kick Ass Wings

Tommy’s Kick Ass (Healthy) Chicken Wings

Kickass Chicken Wing Rub

1/2 teaspoon cayenne pepper

1 tablespoon of onion powder

1 teaspoon of celery salt

1/2 teaspoon of crushed red pepper

1 tablespoon of sweet paprika

1 teaspoon of granulated garlic

Mix all ingredients and apply generously on both sides of wings

Place chicken wings, skin side up in pan and bake for 25 to 30 minutes at 400 degrees. When done toss wings in a bowl with Tommy’s kick ass wing sauce.

Kickass Wing Sauce

1 tablespoon of butter

2 chipotle peppers in adobo sauce

1 cup of ketchup

1 teaspoon of dijon mustard

1 teaspoon of red wine vinegar

1 teaspoon of brown sugar

1 teaspoon of molasses

1 tablespoon of worcestershire

1/4 teaspoon of salt

1/2 teaspoon of fresh ground pepper

Melt butter in a small sauce pan and add finely chopped chipotle peppers. You can leave seeds in when chopping peppers for spicier sauce. Add remaining ingredients and simmer for 5 to 8 minutes, and then toss with wings.
